Rustic Garlic-Rosemary Chicken Thighs and Potatoes with White Wine

A wonderful flavorful blend of spices, garlic, extra virgin olive oil and a splash of white wine with Paprika and garlic vesuvio cut potatoes makes this a one pot rustic chicken dish a crowd pleasing beauty. Whenever possible I do believe in finding Organic Chicken sourced locally. The true foundation of Mediterranean cooking is using the highest quality ingredients one can find and knowing the source. Although we all can’t live on farms in Tuscany we can apply many of the principles exactly where we live by being discerning of every ingredient we choose to go into our food. The Tuscan rustic life is choosing the absolute best ingredients you can find and nurturing them. This will be a go to recipe you can use over and over again and is the foundation to how to cook a flavorful, juicy and golden brown chicken on top of the stove with a quality skillet. My skillet is Cast Iron Ceramic and I am in love with it.

Rustic Garlic-Rosemary Chicken Thighs and Potatoes with White Wine

A healthy delicious foundational ast iron skillet classic rustic chicken recipe.

Equipment

  • Cast iron skillet or skillet you have available

Ingredients
  

  • 5 Chicken Thighs (organic if possible)
  • 1 bowl lemon and salt water
  • 5 golden Potatoes< peeled sliced in long quarters
  • 2 cloves garlic smashed leave whole
  • 1/3 cup white wine
  • 1/2 tsp Salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 garlic salt
  • 1 tbsp olive oil
  • 1 tsp butter
  • 1/2 tsp tsp Rosemary

Instructions
 

  • place chicken thighs in cold water with 1 fresh lemon and tsp salt for half hour, after half hour rub the chicken thighs together in the bowl and run under cold water.
  • remove chicken from the water and remove skin and trim any fat, pat dry with a paper towel and place chicken on prep board or plate. Begin to season both sides with salt, pepper and garlic powder.
  • In a skillet drizzle olive oil and turn on medium heat, add the butter allow to get hot, place chicken in skillet, it should begin to sizzle. Place the pieces of fresh garlic around chicken. After 10 min turn over to other side and allow to cook another 10 minutes. In the mean time in a bowl toss the potatoes with paprika and garlic salt and a drizzle of olive oil. Give the Chicken another turn and pour in the white wine. Add your Seasoned potatoes all around, add the rosemary and cover the pan, lower the heat to simmer and allow to cook 25 to 30 min.
  • Check half way thru and move pieces around a little, at this point you may add a small amount of water or chicken broth over the chicken to add extra juiciness. Finish cooking and ready to serve.

Notes

Remember to wash your hands before handling chicken and keep your work surface and areas clean and wash area very well when finished. 
Season to preferred taste for you and your family,  if you feel you need a little more or a little less seasoning go according to all dietary guidelines you may follow.  The amounts I use is tested on me and my family taste as well. And we love it!
