Le Farfalle Pasta with Sauted Zucchini and fresh Tomatoes

The first official day of summer just a few days ago has me me thinking of Zucchini and fresh chopped tomatoes with garlic sauted to perfection with simple whole ingredients tossed with Farfalle Pasta. I love this summer dish for so many reasons. It is a complete whole meal with fresh ingrdients that is at the base of Mediteranean eating. It can be prepared in 15 minutes and with a little kitchen help the vegetables can be chopped up and sauteing in five minutes.

Bowtie Pasta with fresh Zucchini and tomato sauce and White Wine

The perfect Summer Dish for a complete deliscious meal the entire family will love!

Ingredients

  • 1/2 lb Farfalle (bowtie Pasta)
  • 3 Zucchini
  • 4 Tomatoes
  • 2 cloves Garlic
  • I cup fresh Parsley
  • 1/2 tsp Salt
  • 1/4 Pepper
  • 1/2 cup White Wine (optional)
  • Goat cheese Crumbled (optional)
  • Pecorino Romano (optional)

Instructions

  • Begin to chop and prepare all Ingredients, Zucchini should be cut in circles then quartered
  • Add a thin layer of Extra Virgin Olive oil to a sauce pan. Begin to saute the garlic until translucent and add all the tomatoes, aliow to cook on med heat, stirring often.
  • In another pan add water 3/4 full and allow to come to boil. Add the Pasta and stir often. Add 1 teaspoon salt to the boiling Pasta Water and stir often. Until Al dente and strain.
  • As the Pasta is cooking, go ahead and add to the cooking tomatoes and garlic the rest of the ingredients. Add all the chopped zucchini, Parsley, Pepper and Salt gently tossing well every few minutes. Cover and allow to cook for 10 minutes on medium heat stirring occasionally. In the mean time check to see if the pasta is ready, take one cup of water from the pasta and add it to your tomato and zucchini sauce that is cooking, simmer to low and cover again. for a few min. Then on med heat add 1/s cup of white wine let cook for the final few min. When pasta is ready then strain all the water from the pasta and add all the Pasta to your sauce pan. Toss all together on stove and give it a few minutes to allow all the ingredients to combine together.
  • I Love to serve in beautiful bowls to give a special touch and we are loving crumbled goat cheese on top of our Pasta just before eating. If you prefer instead add fresh grated pecorino romano cheese. You will be delighted with the combination of these wonderful flavors.
